[1] Non-food contact surfaces: designed; constructed; maintained; installed; located Observed ice forming on the condensing unit in the middle of the bar. Unit needs to be repaired or replaced to prevent ice from forming on unit. Recommend removing perishable items from unit until it can be repaired.
[1] Floors; constructed; drained; clean; good repair; covering installation; dustless cleaning methods Observed water pooling under the dishwasher near the bar entrance. Need to remove water to prevent mold growth and ensure there are no leaking pipes or units.
[1] Lighting provided as required; fixtures shielded Some of the fridges in the bar did not have lights inside the unit. Adequate lighting not provided. Provide sufficient lighting to ensure food protection and proper cleaning. Highly recommend filling or covering open outlets in units.

General Comments that relate to this Inspection The items noted on the opening inspection have been corrected.Hand sinks are stocked and operating.There are 3 glass washers in the bar. two glasswashers checked ok at 120 F and 100 ppm chlorine concentration. Glass washer on west side is not operating at this time; glass washer will be serviced later today.Provide chlorine test strips for monitoriing of chlorine for proper concentrations for glass washers.Provide thermometers in refrigeratos with milk product.

General Comments that relate to this Inspection Ok to issue permit to operate.Glass washers not set up with chemicals yet; glassware and utensils to be run through dishwasher in main dish wash area until glass washers in bar are properly operating; bar will open for training tomorrow and to the public on 6/9/2014. Ensure to stock all dispensers with soap and paper towels at all hand sinks before start of operations.RIsk category 1 assigned. No CFPM required for bar.
