[4] Facilities to maintain product temperature Reach-in fridge under cook line is at 60F; food items on the top of the unit are 40-43F. All other food items were removed from the unit. Unit cannot be used until it can maintain <=41F. Need to repair or replace the until so it can maintain <=41F. Dairy reach-in fridge in the bus station was at 50F. All food items were removed. Must repair or replace unit so it maintains <=41F.
[1] Non-food contact surfaces: designed; constructed; maintained; installed; located The middle reach-in/under counter fridge (Sys-G) has two broken drawers and prevents them from closing completely. Need to replace or repair to maintain internal temperature.
[2] Toilet rooms: self closing doors; fixtures maintained; clean; hand soap/drying devices provided; proper waste receptacle Two of the handsinks in the active cook areas were out of hand towels. Keep hand sinks stocked with soap and paper towels at all times to ensure proper hand washing - Corrected on site.
General Comments that relate to this Inspection Due to the age of the cold holding units; even if they have an integrated internal thermometer; it is highly recommended all cold holding unit have additional thermometers in the warmest area of the until. Contact said the cold holding unit are connected to a central computer so the temperatures can be monitored. I am requesting that all units in Rosie's be monitored and check twice a day for the next 7 days to observe the function of the cold holding until. [1] Wiping clothes: clean; use restricted Observed a couple of moist towels on the counters no being stored in a sanitizer bucket. Moist wiping cloths must be kept in sanitizing solution between uses to prevent bacteria growth - corrected on site.
