Ambrosia from 9/29 47-48F. Item was voluntarily discarded. Potato salad in 2'' restaurant pans that had been placed in the until a couple hours previous that day at 44F. Egg salad that had been placed in the unit 30 minutes prior in 4'' restaurant pan at 70F. Both of these items were taken to the blast chiller during the inspection Observed cans of ingredients that were being chilled in the unit and unit was holding at 41F. Though the potato salad and egg salad were still cooling properly; discussed process with contact to ensure proper cooling of all dishes. Contact requested to have the temperature of the walk-in until reduced to 32F since a lot of salads and ready-to eat food items are stored in this unit. Continue to chill ingredients and ensure staff use 2'' restaurant pans. Contact said the eggs from the salad had been cooked the same day and normally the request that staff make the egg salad from eggs that have been chilled.

High temperature dishwasher not achieving proper sanitizing rinse temperature; read 150F at the manifold and 154F at the rack. Repair unit to reach 180F at the manifold. All dishes that had just been run through he machine need to be sanitized. Spoke to maintenance about the issue during the inspection. All dishes are being diverted to Rosie's kitchen dishwasher (observed final rinse of >=180F on dishwasher).

The hand wash sink in the bus station is not draining and the handsink is filling with stagnant water. Need to clear line/repair so the sink is draining properly.
