- [1] Non-food contact surfaces: designed; constructed; maintained; installed; located
Several non food contact surfaces need maintaining throughout deli/bakery area:1) Flooring is in need of repair in several areas. The bakery kitchen is in the worst shape with several holes are present. However; throughout kitchen there are earlier repaired that are peeling and some attention is neeed. Floors need to be repaired or replaced to be smooth and cleanable without gaps that can create standing water issues. If patches from previous repairs are peeling or lines are separating; those need to be addressed as well.2) Shelving under hot holding area is worn down in several areas; creating exposed particle board. These areas need to be repaired to be smooth and easily cleanable. Cabinetry in general has some issues - including an area underneath soda machine where flooring does not reach and lay out makes cleaning almost impossible.3) Caulking in hand sink in back needs to be redone as it is peeling up and food build up is present.
