Observed thermometer missing from reach in fridge next to freezer and back freezer. Ensure all refrigeration and freezer units are stocked with a conspicuously placed thermometer in order to monitor unit temperature.

Hand sink clean and stocked. Restroom clean and stocked. Reach in freezer in front area @ 0F. Dairy fridge under espresso machine @ 30F. Dairy dates good. Sani buckets in use @ 100 ppm Chlorine. Three compartment sink not in use during inspection but facility uses same tabs for 3 compartment sink as sani buckets. Test strips on hand. Facility very clean and well kept.Facility cuts up and freezes fruit to be used for drinks. Glove use required by operator during this process. Ensure staff still washes hands prior to donning gloves.Ice machine clean.

Observed both reach-in refrigerators without thermometers. Ensure all refrigerators and freezers have a thermometer for monitoring product temperature. Front unit temped @ 30F and back unit temped @ 40F.

Observed shelves under powder flavor mix storage bins where paint has worn away and bare wood is showing. These shelves also have old lines of caulk. Remove the old caulk as that surface may harbor bacteria and repaint the shelves to ensure they are smooth and easily cleanable.
